Held on Thursday, 28 May 2026, the Franciacorta and Marennes Oléron Masterclass served as a premier showcase for the "European Elegance" campaign. A European Union supported initiative dedicated to reinforcing the prestige of Protected Designation of Origin (PDO) and Protected Geographic Indication (PGI) labels.


The afternoon went beyond a traditional tasting, evolving into an immersive, educational journey of discovery and delicious surprises, celebrating the very best of European culinary heritage. As one guest beautifully summarized the experience: “European elegance, right here in Hong Kong.”



The Perfect Convergence: A Tale of Two Terroirs

The core narrative of the masterclass centred on an unexpected yet deeply harmonious dialogue between two of Europe’s most revered terroirs: the effervescent, sun-kissed hills of Lombardy, Italy, and the briny, wave-swept Atlantic coast of France.

Bringing profound credibility and insight to the session was Jennifer Docherty MW. With 16 years of distinguished experience in the global wine industry and education, Docherty offered the trade audience an authoritative yet highly accessible perspective on the pairings.


Having embarked on an immersive study trip to the Franciacorta region in 2025, Docherty enriched the tasting with firsthand storytelling, bridging the gap between technical viticulture and sensory appreciation. Her expertise allowed guests to understand the precision behind the pairings, translating complex concepts of soil, climate, and maturation into actionable knowledge for the local trade market.


An Experiential and Educational Masterclass


Designed specifically for discerning professionals, the seated masterclass united a diverse table of importers, chefs, culinary school lecturers, and retailers. The session carefully balanced luxury hospitality with rigorous product education, challenging the room's curious minds and delighting their palates through a curated menu of five extraordinary pairings:


  • The Raw Varieties: Guests tasted two distinct styles of freshly shucked Marennes Oléron oysters—the crisp, delicate Fine de Claire and the bold, full-flavored Spéciale de Claire, each telling a distinct story of the Atlantic shore.
  • The Hot Innovations: Expanding the boundaries of traditional raw pairings, the culinary team presented two innovative cooked dishes utilizing the versatile Spéciale de Claire oysters.
  • The Liquid Matches: These four oyster iterations were meticulously paired with a flight of five distinct Franciacorta pours, demonstrating the incredible range, structure, and food-pairing versatility of the Italian denomination.

One trade guest remarked, “I never thought sparkling wines like Franciacorta could make an oyster taste even more like a travel to sea.” Another shared, “Each pairing was a surprise. I came for the oysters and fell in love with Franciacorta.”
