Beef in Lovato Olive Oil

Recipe for Beef in Lovato Olive Oil.

Here are the ingredients (for 6 people)

  • 1 kg beef ‘cappello del plate’ (shoulder muscle)
  • 1 clove garlic clove
  • 200 g extra virgin olive oil
  • A few breadcrumbs
  • 3-4 anchovies
  • Small amount of grated cheese
  • 200 g chopped parsley
  • A pinch of salt
  • 2 tbsp capers

Dust the meat with flour and place in a long, narrow deep pan.

Add enough water to cover the meat.

Add a cup of olive oil, 3-4 anchovies and a pinch of salt.

Place the pan on the heat and cook until the water is reduced.

Simmer the meat for about 3 hours, adding the parsley and minced garlic 45 minutes before the end of cooking. Remove the meat from the pan, cut into thin slices and place in the refrigerator for 12 hours.

Add 1 tbsp breadcrumbs (adjust the amount of breadcrumbs depending on how thick you want the sauce) and 1 tbsp grated cheese to the cooking liquid.

After 12 hours, remove the meat from the fridge and place it in a saucepan with the creamed sauce over the heat, adding 100 ml of water to warm the sauce as it thickens.

Serve with hot polenta, spinach or boiled potatoes.
